May Flower Moon is a pretty much self-explanatory. It’s high spring and flowers are everywhere.

This month, we celebrate Cemetery Appreciation Month. If you’re looking for reset or just a quiet peaceful day, visit your local cemetery. A day trip to graveyard can provide serenity, clarity, inspiration, education, and entertainment. Read some tombstones. Wonder about the lives of the dead and their loved ones. It helps bring clarity into your own life. You don’t even have to go to one with relatives, in fact, it’s recommended that you pick a different cemetery if possible. The dead can distract us from living our lives.

Recipe Corner – April 2019

Cinco de Mayo is coming up soon and I found the perfect recipe that works for both this festive occasion and Halloween at the same time! Two-fer!  I present to you, Burrito Skulls!

Thanks to the good people over at Hungry Happenings, your dinner can be spicier than a summer day in the Arizona desert. Muy caliente!  What makes is this recipe so fabulous is that the burrito filling is customizable to whatever you want! Don’t like onions? Don’t use them. Don’t like corn? Don’t use them. Black beans give you gas? Don’t use them.  The trick is the homemade tortilla dough, which is a lot easier than it sounds.

Ingredients:

Tortillas:

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoon baking powder
  • 1 teaspoon kosher salt
  • ½ cup lard or shortening
  • ¾ cup water
Burrito Filling
  • 1 tablespoon vegetable oil
  • 1 pound ground sirloin
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 6 tablespoons black beans
  • 6 tablespoons corn
  • 6 tablespoons chopped tomatoes
Egg wash:
  • 1 large egg
  • 1 teaspoon water
Optional Sauces
  • sour cream, guacamole, salsa
